Cheung Fun, or rice noodle rolls, are a dim sum classic known for their smooth, tender rice noodle wrappers that melt in your mouth. These delicate noodles wrap around flavorful fillings like shrimp or beef, offering a perfect balance of texture and taste.

Shrimp is traditional and that is what we will make here. While making Cheung Fun at home might seem daunting, with practice, you can master the technique and recreate this irresistible dim sum favorite in your own kitchen. A bite of Cheung Fun is a bite of pure dim sum bliss!

Ingredients
    For the Rice Noodle Batter:
  • 1 cup rice flour
  • 1/4 cup tapioca starch
  • 1/4 cup cornstarch
  • 1 1/2 cups water
  • 2 tablespoons vegetable oil
  • Pinch of salt
  • For the Filling (choose one or mix and match):
  • 1/2 pound shrimp, peeled, deveined, whole
  • 1 tablespoon salt
  • 1 tablespoon white pepper
  • 1 tablespoon rice wine
  • For the Sauce:
  • 3 tablespoons light soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon water
Instructions
    Prepare the Batter:
  1. In a mixing bowl, combine the rice flour, tapioca starch, cornstarch, and salt.
  2. Gradually add the water while stirring until the mixture is smooth and free of lumps.
  3. Set the batter aside to rest for 30 minutes.

  4. Prepare the Filling:
  5. If using shrimp, steam them briefly until just cooked, then drain and set aside. Before steaming, marinate the shrimp in rice wine, white pepper, and salt for extra flavor.

  6. Steam the Rice Noodles:
  7. Set up a steamer with a flat, shallow tray (a baking pan or a large plate works well) and lightly grease the tray with oil to prevent sticking.
  8. Stir the batter and pour a thin layer (about 1/8 inch thick) into the tray.
  9. Cover and steam over high heat for 1-2 minutes, until the rice noodle sheet is set and slightly translucent.

  10. Carefully remove the tray from the steamer and let it cool slightly.
  11. Add the Filling:
  12. Once the rice noodle sheet is cool enough to handle, place a portion of the filling along one edge of the sheet.
  13. Using a spatula, gently lift and roll the sheet over the filling to form a roll.
  14. Transfer the roll to a serving plate.
  15. Repeat the Process:
  16. Repeat the steaming and filling process with the remaining batter and filling until all the rice noodle rolls are made.
  17. Prepare the Sauce:
  18. In a small saucepan, combine the light soy sauce, sugar, water, and sesame oil.
  19. Heat over low heat until the sugar dissolves, then remove from heat.
  20. Serve:
  21. Drizzle the sauce over the cheung fun and serve immediately. Enjoy your homemade rice noodle rolls with a side of chili sauce or soy sauce for dipping.
