Ingredients
  • 1 cup cabbage, chopped
  • 1/2 cup onion, finely chopped
  • 1/3 cup scallions, chopped
  • 1 tablespoon garlic, minced
  • 1/2 tablespoon ginger, minced
  • 1/2 pound ground pork
  • 1 tablespoon soy sauce
  • 1/2 tablespoon sugar
  • Black pepper, to taste
  • 1 tablespoon sake
  • 1 tablespoon sesame oil
  • 3 tablespoons oyster sauce
  • 2 tablespoons potato starch
  • Wonton wrappers
  • Dumpling Sauce:
  • 1 tablespoon black vinegar (any vinegar will do)
  • 1 tablespoon soy sauce (adjust to taste)
  • 1/2 tablespoon sesame oil
  • Alternatively, store-bought gyoza sauce can be used
Instructions
    Prepare the Filling:
  1. In a large mixing bowl, combine the ground pork, minced ginger, minced garlic, soy sauce, sesame oil, sugar, oyster sauce, sake (if using), and potato starch. Mix thoroughly until well combined.
  2. Add the chopped cabbage, onion, and scallions to the pork mixture. Mix well and set aside for at least 30 minutes to allow the flavors to meld.
  3. Assemble the Gyoza:
  4. Take one wonton wrapper and place about 1 tablespoon of the filling in the center.
  5. Brush the edges of the wrapper lightly with water.
  6. Fold the wrapper over the filling to create a half-moon shape, pleating one side of the wrapper as you press to seal the dumpling tightly.
  7. Place the assembled gyoza on a floured surface to prevent sticking.
  8. Cook the Gyoza:
  9. Heat a frying pan over medium heat and brush the bottom with sesame oil.
  10. Place the gyoza in the pan, making sure they are not touching each other.
  11. Add a small amount of water to the pan (about ½ cup) and cover immediately. Steam the gyoza until the water has evaporated, about 5-7 minutes.
  12. Once the water has evaporated, drizzle a small amount of sesame oil into the pan and continue cooking until the bottoms of the gyoza are golden brown and crispy.

  14. Carefully remove the gyoza from the pan and place them upside down on a serving plate to showcase the crispy side.
  15. Serve hot with the dumpling sauce on the side.
