Pancit Molo is a comforting Filipino soup featuring tender pork dumplings simmered in a light, savory broth. Despite its name, it’s not a noodle dish but rather a hearty wonton soup, originating from the Molo district of Iloilo in the Philippines.

This dish combines the rich flavor of homemade broth with the delicate texture of pork-filled dumplings and fresh vegetables, creating a meal that’s both filling and refreshing. Perfect for cold, rainy days or any time you crave something warm and nourishing, Pancit Molo brings a touch of Filipino tradition to the table.

Ingredients
    Wonton
  • 1 package wonton wrappers
  • 1 pound ground pork
  • 1 can water chestnuts, chopped
  • 1 cup carrots, chopped
  • 1 cup onion, chopped
  • 1/3 cup garlic, chopped
  • Salt and pepper, to taste
  • 3 tablespoons flour
  • 1 Egg, beaten
  • Garnishes or Toppings
  • Sliced scallions
  • Garlic oil
  • Chili oil
  • Soy sauce or fish sauce
  • Broth
  • 2 pounds pork bones
  • 1 bay leaf
  • 10 cups water
  • Salt and pepper, to taste
  • For Extra Flavor (optional sauté)
  • 1/2 head cabbage, julienned
  • 5 cloves garlic, chopped
  • 1 cup onion, chopped
  • 1 cup carrots, julienned
Instructions
    Make the Broth:
  1. In a large pot, boil the pork bones in 10 cups of water. Skim off any impurities that rise to the surface to keep the broth clear.
  2. Add the bay leaf, and season with salt and pepper. Simmer until any meat or marrow on the bones is tender. Set the broth aside.
  3. Prepare the Wontons:
  4. In a mixing bowl, combine the ground pork, chopped water chestnuts, carrots, onion, garlic, flour, and beaten egg. Season with salt and pepper to taste.
  5. Place 1 tbsp of the mixture in the center of each wonton wrapper. Pull the wrapper up around the filling to form a dumpling. Set aside until ready to cook.
  6. Add Extra Flavor (Optional):
  7. In a small saucepan, sauté the garlic, onion, and julienned vegetables with a bit of oil. Season with salt and pepper, then transfer the sautéed vegetables to the pot of broth.
  8. Cook the Wontons:
  9. Bring the broth to a boil. Carefully drop the prepared wontons into the boiling broth.
  10. Cook the wontons for about 10 minutes, or until the filling is fully cooked and the wrappers are tender.
  11. Serve:
  12. Serve hot, garnished with sliced scallions and a drizzle of garlic oil. Offer soy sauce or fish sauce on the side for additional seasoning.

  • If you’re short on time, you can use store-bought broth instead of making your own, but nothing beats the depth of flavor from a homemade pork broth. Also, feel free to customize the fillings for your wontons by adding shrimp or mushrooms for a different twist!
  • Make the wontons ahead of time and keep them frozen. Then, for a quick and easy meal, just boil some broth and drop in the frozen wontons—no need to thaw! They cook up beautifully and save you time on busy days.
