Sesame balls, or jian dui (煎堆), are golden, crispy delights filled with sweet red bean paste and coated in fragrant sesame seeds. Their perfectly crunchy exterior and soft, chewy interior make them an irresistible snack or dessert.

Rooted in ancient Chinese traditions, jian dui was once a festive treat enjoyed during celebrations and festivals. Over time, it became a beloved dim sum staple in Cantonese cuisine, cherished for its delightful texture and rich flavor.

For me, sesame balls are more than a festive treat—they’re a family favorite. Making them at home brings joy to our kitchen, creating moments to savor together. Whether enjoyed during celebrations or as a special snack, jian dui always brings a little extra happiness to the table.

Ingredients
  • 3/4 cup glutinous rice flour
  • 1 teaspoon baking powder
  • 2 tablespoons sugar
  • 1/4 to 1/4 1/3 cup boiling water
  • 1 teaspoon vegetable oil
  • Red bean or black bean paste
  • Oil, for frying
  • Water (for dipping)
  • White sesame seeds
Instructions
    Prepare the Dough:
  1. In a mixing bowl, combine the glutinous rice flour, baking powder, sugar, and vegetable oil.
  2. Gradually add the boiling water, mixing until a smooth dough forms. Let the dough rest for 10 minutes.
  3. Shape the Balls:
  4. After the dough has rested, divide it into 10 equal pieces. Roll each piece into a 1 inch ball, then flatten it to about 1.5 inches in diameter.
  5. Fill and Shape:
  6. Place a small amount of red bean or black bean paste in the center of each flattened dough piece.
  7. Pinch the edges together to seal the filling inside, then gently reshape the dough into a round ball.
  8. Coat with Sesame Seeds:
  9. Lightly dip each ball in water, then roll it in sesame seeds to coat evenly.
  10. Fry the Sesame Balls:
  11. Heat oil in a medium-sized pot over medium heat.
  12. Once the oil is hot, carefully add the sesame balls and fry until they are golden brown and crispy. This should take about 5-7 minutes. Make sure to turn them occasionally for even cooking.
  13. Serve:
  14. Remove the sesame balls from the oil and drain them on paper towels. Serve hot and enjoy!

  • When shaping the sesame balls, make sure to pinch the dough tightly around the filling to prevent it from leaking out during frying. A well-sealed ball will ensure a perfect, crispy exterior.
  • Fry the sesame balls on medium heat to ensure they cook evenly and don’t brown too quickly. This way, the dough has time to puff up and the inside gets that perfect chewy texture.
