Description

Khao Niew Mamuang, or Thai Mango Sticky Rice, is a classic dessert that highlights the perfect balance of creamy and fruity flavors. Made with glutinous sticky rice infused with rich coconut milk and paired with sweet, ripe mango slices, this dish offers a delightful harmony of textures and tastes.

A beloved treat in Thailand, it’s simple yet indulgent, making it a perfect dessert for any occasion and a wonderful way to celebrate the natural sweetness of fresh mango.

Ingredients
  • 1 cup sweet glutinous rice
  • 1 cup water
  • 1 1/2 cups coconut milk
  • 1 ripe mango, sliced
  • 1 cup sugar
  • Heavy cream, for topping
Instructions
    Cook the Sticky Rice:
  1. Rinse the sweet glutinous rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice with 1 cup of water and 1 cup of coconut milk. Bring to a boil, then reduce the heat to low and cover the pot. Cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
  3. Prepare the Sweet Coconut Sauce:
  4. In a separate small saucepan, combine the remaining 1/2 cup of coconut milk and the sugar. Heat gently, stirring until the sugar is fully dissolved.
  5. Combine the Rice and Coconut Sauce:
  6. Once the rice is cooked, transfer it to a large mixing bowl. Pour the sweetened coconut milk over the rice, and gently stir until the rice has absorbed the coconut milk and takes on a shiny, creamy consistency. Let the rice sit for a few minutes to allow the flavors to meld together.
  7. Serve:
  8. Serve warm or at room temperature, topped with slices of ripe mango. For an extra touch of richness, drizzle a bit of heavy cream over the top. Enjoy this delightful dessert that brings together the essence of Thai cuisine and the simple pleasures of life.
Maricel's Tips
  • If you want to add a bit of crunch, try sprinkling some toasted sesame seeds or crushed roasted peanuts on top before serving. It adds a wonderful texture contrast to the creamy rice and juicy mango, making this dessert even more irresistible!
  • Try adding a pinch of salt to the coconut milk mixture to elevate the flavor. Just a small amount brings out the natural sweetness of the coconut and balances the dish beautifully!
