Ingredients
    For the Chicken:
  • 1 pound boneless, skinless chicken thighs or breasts, cut into thin strips
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons coconut milk
  • 1 tablespoon vegetable oil
  • 30 skewers, Bamboo soaked in water for minutes
  • For the Peanut Sauce:
  • 1/2 cup creamy peanut butter
  • 1 tablespoon red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 cup coconut milk
  • 1 tablespoon lime juice
  • 1/4 cup water (to adjust consistency)
  • Chopped peanuts and cilantro, for garnish (optional)
Instructions
    Marinate the Chicken:
  1. In a large bowl, combine the minced garlic, ginger, curry powder, turmeric, soy sauce, fish sauce, brown sugar, coconut milk, and vegetable oil. Mix well.
  2. Add the chicken strips to the marinade, making sure they are fully coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for a more intense flavor.
  3. Prepare the Peanut Sauce:
  4. In a small saucepan, combine the peanut butter, red curry paste, soy sauce, brown sugar, coconut milk, and lime juice.
  5. Cook over low heat, stirring constantly until the sauce is smooth and well combined. If the sauce is too thick, add a bit of water until you reach your desired consistency.
  6. Remove from heat and set aside.
  7. Grill the Chicken:
  8. Preheat your grill or grill pan to medium-high heat.
  9. Thread the marinated chicken strips onto the soaked bamboo skewers.
  10. Grill the skewers for about 3-4 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
  11. Serve:
  12. Arrange the chicken skewers on a platter and drizzle with a little bit of the peanut sauce.
  13. Garnish with chopped peanuts and cilantro if desired.
  14. Serve with the remaining peanut sauce on the side for dipping.
