Pour in the water and add the sliced chilies, if using. Stir to combine, then cover the pan and let the chicken simmer on low heat for about 20 minutes, or until the chicken is cooked through and tender. Stir occasionally and add a bit more water if the sauce reduces too much.
5 Adjust and serve–Taste the sauce and adjust the seasoning with more fish sauce or sugar if needed.
6 Once done, garnish with fresh cilantro or green onions and sliced peppers and serve hot with steamed jasmine rice.
Maricel's Tips
- I recommend using bone-in, skin-on chicken for this recipe because it adds more flavor to the dish. However, you can also use boneless chicken thighs if you prefer a quicker cooking time.
- If you love ginger, feel free to add more to intensify the flavor. On the other hand, if you prefer a milder taste, reduce the ginger slightly—just don’t skip it, as it’s the star of the dish!
