Add the oysters, clams, scallions, and shredded carrots to the batter. Season with a pinch of white ground pepper and gently mix until the seafood and vegetables are evenly coated.
Cook the Pancakes:

Heat 1 tablespoon of cooking oil in a large frying pan over medium heat. Once the oil is hot, measure out about 3/4 cup of the seafood mixture and pour it into the pan. Spread the mixture into a thin, even layer to form the pancake.

- For an extra crispy pancake, make sure the oil is hot before adding the batter to the pan. Also, don’t overcrowd the pan—cook one pancake at a time to ensure even cooking.
