Rice Noodle Rolls

Instructions

Prepare the Batter:

  1. In a mixing bowl, combine the rice flour, tapioca starch, cornstarch, and salt.
  2. Gradually add the water while stirring until the mixture is smooth and free of lumps.
  3. Stir in the vegetable oil and set the batter aside to rest for 30 minutes.

Prepare the Filling:

  1. If using shrimp, blanch them quickly in boiling water until just cooked, then drain and set aside.
  2. If using beef, cook it in a pan until browned and fully cooked. Set aside.

Steam the Rice Noodles:

  1. Set up a steamer with a flat, shallow tray (a baking pan or a large plate works well) and lightly grease the tray with oil to prevent sticking.
  2. Stir the batter and pour a thin layer (about 1/8 inch thick) into the tray.
  3. Cover and steam over high heat for 3-4 minutes, until the rice noodle sheet is set and slightly translucent.
  4. Carefully remove the tray from the steamer and let it cool slightly.

Add the Filling:

  1. Once the rice noodle sheet is cool enough to handle, place a portion of the filling along one edge of the sheet.
  2. Using a spatula, gently lift and roll the sheet over the filling to form a roll.
  3. Transfer the roll to a serving plate.

Repeat the Process:

  1. Repeat the steaming and filling process with the remaining batter and filling until all the rice noodle rolls are made.

Prepare the Sauce:

  1. In a small saucepan, combine the light soy sauce, sugar, water, and sesame oil.
  2. Heat over low heat until the sugar dissolves, then remove from heat.

Serve:

  1. Drizzle the sauce over the cheung fun and serve immediately. Enjoy your homemade rice noodle rolls with a side of chili sauce or soy sauce for dipping.
