Instructions
Marinate the Chicken:
-
In a large bowl, combine the minced garlic, ginger, curry powder, turmeric, soy sauce, fish sauce, brown sugar, coconut milk, and vegetable oil. Mix well.
-
Add the chicken strips to the marinade, making sure they are fully coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for a more intense flavor.
Prepare the Peanut Sauce:
-
In a small saucepan, combine the peanut butter, red curry paste, soy sauce, brown sugar, coconut milk, and lime juice.
-
Cook over low heat, stirring constantly until the sauce is smooth and well combined. If the sauce is too thick, add a bit of water until you reach your desired consistency.
-
Remove from heat and set aside.
Grill the Chicken:
-
Preheat your grill or grill pan to medium-high heat.
-
Thread the marinated chicken strips onto the soaked bamboo skewers.
-
Grill the skewers for about 3-4 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
Serve:
-
Arrange the chicken skewers on a platter and drizzle with a little bit of the peanut sauce.
-
Garnish with chopped peanuts and cilantro if desired.
-
Serve with the remaining peanut sauce on the side for dipping.
Maricel's Tips
- For an extra burst of flavor, squeeze fresh lime juice over the grilled chicken just before serving. It adds a bright, tangy note that complements the richness of the peanut sauce beautifully.
- If you like a little heat, feel free to add a dash of chili flakes to the marinade or the peanut sauce!
