Combine Ingredients

Add the Chicken

  1. Place the chicken in the pot with the marinade.
  2. Bring the mixture to a boil over high heat, uncovered. Once it boils, lower the heat to medium and cover.
  3. Simmer for 1 to 1.5 hours, until the chicken is tender. Stir occasionally to ensure even cooking.

Thicken Sauce

  1. If desired, uncover the pot and simmer for an additional 10 minutes to thicken the sauce.

Maricel's Tips

  • While typically served as a stew, you can also pan-sear the cooked meat and drizzle the sauce over it when serving.
  • Pair with jasmine rice and a side of diced tomatoes and onions. For an extra touch, add shrimp paste as a condiment.
  • Adobo tastes even better the next day, as the meat absorbs more flavor. It is perfect to make on the weekend and enjoy during the week, as its flavors deepen over time. This makes it an easy and convenient meal when returning home from school.
