Pork and shrimp shumai (pronounced "shoo-my") are tender, steamed dumplings that originated in China and have become a favorite worldwide. These dim sum staples feature a savory filling of seasoned pork and shrimp wrapped in delicate wonton wrappers.

Instructions

Mix the Filling:

  1. In a bowl, combine the ground pork, ground shrimp, minced onion, minced garlic, rice wine, oyster sauce, potato starch, and sesame oil.
  2. Mix well until fully combined.

Assemble the Shumai:

  1. Scoop about 1 oz of the filling mixture and place it in the center of a wonton wrapper. Gently crimp the wrapper around the filling to form the shumai shape.
  2. Optional: Freeze for Later Use:
  3. Place the assembled shumai on a parchment-lined baking sheet, ensuring they do not touch each other.
  4. Freeze in a single layer until solid (Individual Quick Freezing, or IQF), which prevents sticking.
  5. Once frozen, transfer to a resealable freezer bag or airtight container. Store for up to 3 months.

Steam the Shumai:

  1. Steam the shumai for at least 9 minutes or until they reach an internal temperature of 165°F.

Prepare the Dumpling Sauce:

  1. In a small bowl, combine the soy sauce, rice vinegar, and sesame oil. For a spicy kick, add 1 tsp of hot chili oil or your favorite Asian hot sauce.

Serve:

  1. Serve hot with the dumpling sauce and enjoy your homemade dim sum.
