Prepare the Noodles
- Put the noodles in a large bowl filled with water. Soak for at least 40 minutes. When the noodles are soft, drain in a colander.
Make the Pad Thai Sauce
- In a small bowl, whisk together fish sauce, palm sugar, and tamarind juice.
- Pour the mixture into a small pot and heat on very low heat.
- Simmer for about 10 minutes, stirring occasionally, until the sugar dissolves and the sauce has slightly reduced.
- Taste and adjust sweetness or sourness according to your preference.
- Set the sauce aside.
Cook the Protein and Vegetables
- Heat oil in a large nonstick skillet over medium heat.
- Sauté onions, dried shrimp, tofu, and half of the scallions until fragrant.
- Add the chicken breast and cook through.
- Push the cooked ingredients to one side of the pan.
Cook the Noodles
- In the same pan, add the soaked noodles.
- Cook until soft.
- Gradually add the Pad Thai sauce, stirring continuously to coat the noodles evenly.
Add Eggs and Veggies
- On one side of the pan, add 1 tablespoon of oil and crack in 2 eggs.
- Scramble the eggs and mix them with the noodles.
Serve
- Transfer the Pad Thai to a serving platter.
- Top with cilantro leaves, chopped peanuts, and lime wedges.
- Serve immediately.
