Instructions

Prepare the Noodles

  1. Put the noodles in a large bowl filled with water. Soak for at least 40 minutes. When the noodles are soft, drain in a colander.

Make the Pad Thai Sauce

  1. In a small bowl, whisk together fish sauce, palm sugar, and tamarind juice.
  2. Pour the mixture into a small pot and heat on very low heat.
  3. Simmer for about 10 minutes, stirring occasionally, until the sugar dissolves and the sauce has slightly reduced.
  4. Taste and adjust sweetness or sourness according to your preference.
  5. Set the sauce aside.

Cook the Protein and Vegetables

  1. Heat oil in a large nonstick skillet over medium heat.
  2. Sauté onions, dried shrimp, tofu, and half of the scallions until fragrant.
  3. Add the chicken breast and cook through.
  4. Push the cooked ingredients to one side of the pan.

Cook the Noodles

  1. In the same pan, add the soaked noodles.
  2. Cook until soft.
  3. Gradually add the Pad Thai sauce, stirring continuously to coat the noodles evenly.

Add Eggs and Veggies

  1. On one side of the pan, add 1 tablespoon of oil and crack in 2 eggs.
  2. Scramble the eggs and mix them with the noodles.

Serve

  1. Transfer the Pad Thai to a serving platter.
  2. Top with cilantro leaves, chopped peanuts, and lime wedges.
  3. Serve immediately.
